Chocolate Covered Strawberry Cookies

Preheat oven to 350°F (175°C) and line a baking sheet. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate large bowl, cream together the softened butter and sugars until smooth. Add the egg, 1 tsp vanilla extract, and 2 tbsp Greek yogurt to the wet ingredients and mix until just combined. Gradually fold the dry ingredients into the wet ingredients until a thick dough forms. Stir in the dark chocolate chips. Scoop the dough into balls (or press into heart molds) and slightly flatten them on the prepared baking sheet. Bake for 9–11 minutes. Let the cookies cool completely on a wire rack before frosting.

For the Strawberry Cream Cheese Frosting: In a bowl, beat the softened cream cheese until smooth. Mix in 2 tbsp Greek yogurt and 0.5 tsp vanilla. Add the powdered sugar and powdered freeze-dried strawberries. Beat until the frosting is fluffy and naturally pink. If you desire a thicker piping texture, chill the frosting for 10–15 minutes before use.
