Gluten Free Chocolate Funfetti Cake Bars

Preheat oven to 350 degrees F (175 C). In a large bowl, add dry ingredients (gluten-free flour, coconut sugar, cocoa powder, salt, baking soda) and mix well. Once mixed, add in apple cider vinegar, vanilla extract, eggs, and water. Mix till no lumps. The mixture will be thin, but that’s the desired consistency. Add the cake mixture to a lined baking pan. Bake for 25-30 minutes. Cool completely before frosting with chocolate frosting and adding sprinkles.
