Soft, Pillowy Pumpkin Spice Cookies with Fluffy Cream Cheese Frosting

Preheat oven to 355°F and line a baking tray with parchment. Whisk melted butter and sugar until fluffy, then beat in egg yolk, pumpkin purée, and vanilla extract. Mix in dry ingredients (all-purpose flour, baking soda, baking powder, and salt) until just combined. Cover the dough and chill for 1 hour. Scoop the dough into cookies and bake for 12–13 minutes. Cool completely on the baking tray. For the cream cheese frosting, whip softened cream cheese, melted butter, powdered sugar, and vanilla extract until light and fluffy. Frost the cooled cookies, then dust with cinnamon before serving.
